Coconut Rice Recipe

Ingredients required to prepare coconut Recipe

Raw rice / Basmati Rice -2 cup

Grated coconut – 1 ½ cup

Mustard seeds –2 Tea Spoons

Urad Dal – 4 Tea Spoon

Chillies – 4 Nos

Channa Dal – 2 Tea Spoon

Curry leaves – few

Finely Chopped Ginger – 2 Tea Spoons

Oil – 2 table Spoon

Asafoetida/Hing – a pinch

Cashew nuts – 20

Preparation Method

Cook Raw Rice and spread it in a plate and keep it aside. You can use ordinary rice or Basmati rice. It should be cooked in such a way that rice grains are separate.

Heat oil in a Pan / Kadai

Add mustard seeds, when they splutter, add channa dal, urad dal, cashew nuts and roast them till they turn into slightly brown color.

Note : Roast channa dal first as it will take time to get roasted, then add urad dal and cashew nuts.

Add Chillies, finely chopped ginger, asafoetida and curry leaves and fry for a few more seconds.

Add grated coconut and fry for few minutes till it becomes slightly brown. Add salt as per requirement.

Add cooked rice and mix it well.

Serve Coconut rice hot with chutney or sambar
